Recipe #4: Energy Bars


Hope you are enjoying the long weekend. So far ours has felt like a whirlwind. We were going to go to the Muirhead farm Friday night, but ended up taking Kellen to the hospital to get checked. He'd been fevered for 24 hrs and I was getting nervous. We were told it must be a virus. He seemed okay in the morning, so off we went. Had fun visiting, seeing Grandpa Bill's garden, napping! On Sunday we got to meet Kathy's Joe and Mikhayla (very nice guy and lovely girl!) and hang out with the Jacobs. Sunday evening Kathy and crew came to visit us in the Fort. This morning, Kathy took me on a run...she's running in a half marathon this weekend! I was happy I was able to keep up to her! We had to say goodbye to Kathy, Joe, and Mikhayla this morning. I've cleaned the house and then decided to make some Energy Bars. Perhaps I need them after all that... If you do, here is the delicious recipe. We like to grab them for breakfast when we're busy.

ENERGY BARS
1/3 cup canola oil
1/3 cup brown sugar, packed
1/4 cup molasses
6 oz frozen orange juice concrentrate
2 cup flour, whole wheat
1 tsp baking soda
1 tsp cinnamon
1/2 tsp ground ginger
1/2 cup old fashioned rolled oats
1/2 cup raisins
1/2 cup dried apricots, chopped
1/2 cup sunflower seeds
1/2 cup wheat germ
2 Tbsp sesame seeds

1. Cream oil, brown sugar, molasses. Add defrosted oj concentrate.

2. Combine flour, baking soda, cinnamon, ginger. Blend.

3. Stir in everything else. It makes a very stiff batter.

4. Spread in a greased 9 x 13 pan.

5. Bake 20-25 minutes at 350 degrees F.


Oh, I should mention...Kellen's fever was managed okay with Tylenol. I thought it might be caused by a molar that is almost through but going up and down. The fever is finally gone, but he has a rash this morning on his face. Hmmm, it could be Fifth Disease. Sorry to anyone we may have exposed!!! Special apology goes out to Nolan and baby Ayden. We feel soooo bad about it!

Well I'm glad that my 2nd cousin once removed is getting a bit better now. There's nothing worse in a young life then to be sick. Nothing seems right but they don't have the understanding to know why. I hope he gets over the other thing soon too, I've never heard of it.

Those energy bars sound delicious. I will have to try them some time. Always love to check out your blog. I need to smarten up and update mine.
